  • This knife is built to work and built to last. At its core is White #2 carbon steel. It cuts clean and stays true. The stainless-clad sanmai construction offers protection without sacrificing performance, and the acid-etched finish reveals the dark steel beneath against the bright stainless on top.

    The roasted cherry wood handle is smooth in the hand, warm in color, and shaped for long hours in the kitchen. With time and use, the grain deepens and the wood darkens, aging like something meant to endure.

    The saya has been etched with a repeating pattern, something between the skin of a ripe, unfamiliar fruit and the scaled hide of a sea creature pulled from deep water. The design shifts subtly in the light, catching shadows in its grooves. Can you guess what it is?
