Ebony Handle

This Zakuri 210mm Blue #1 Wa-Gyuto is a special order knife with an ebony octagon handle (horn color may vary). The Blue #1 edge takes a very sharp edge and holds it for quite some time. Blue #1 is designed for excellent edge retention, and though it doesn't get as sharp as white #2, take a very nice edge still. This knife is not stainless will patina with use. If not cared for properly, it may rust.

Please note that as water buffalo horn is a natural material, the color of the horn may vary. The picture shows a blonde horn, but the ferrule may be black, brown, or marble, depending on our inventory at the time.

This Zakuri 240mm Blue #1 Kurouchi Wa-Gyuto is a special order knife with an ebony handle (horn color may vary). The Blue #1 edge takes a very sharp edge and holds it for quite some time. Blue #1 is, in my opinion, the best balance of sharpness and edge holding in a high carbon steel today. This knife is not stainless will patina with use. If not cared for properly, it may rust. However, the kurouchi finish does partially protect the blade from rust.

This Zakuri 270mm Aogami Super Kurouchi Sujihiki is a special order knife with an ebony octagon handle (horn color may vary). As a slicer, this knife is a little more robust than the super thin ones that have become popular recently, however, there is a decent distal taper and a pretty wide bevel. The Aogami Super edge takes a very sharp edge and holds it for quite some time. Aogami Super is, in my opinion, the best balance of sharpness and edge holding in a high carbon steel today. This knife is not stainless will patina with use. If not cared for properly, it may rust. However, the kurouchi finish does partially protect the blade from rust.
