Gesshin Uraku 180mm VG1 Wa-Santoku

  • Our Gesshin Uraku line represents a great value in kitchen cutlery. This is one of our best-selling lines. Not too thin, but not thick either. Not too hard or soft. These knives are suitable for both professional and home cooks alike. They are very chip-resistant, stainless, and lightweight. They come with very nice octagonal handles and matching saya. The wa-gyuto are thinner (especially in the middle and behind the edge) than the standard Gesshin Uraku series and the steel type is different. These are VG1 at about 60hrc. The changes in the steel, heat treatment, and grind help these knives move through food more easily, sharpen more easily, and hold their edge longer. They are still very tough and durable, but slightly less so than the normal Gesshin Uraku series. The handles on these knives come with either black, marble, or blonde buffalo horn.
