• This Zakuri 150mm Blue #1 Kurouchi Funayuki is a double-beveled knife. The handle is made of ho wood and is octagon shaped with a buffalo horn ferrule. This knife is like a small gyuto. It can be used for smaller tasks, where a large gyuto might be too big, but a petty doesn't have the blade height you might want. The blue #1 steel takes a very good edge and holds it pretty well. This knife is carbon, so it can rust if not cared for properly. The kurouchi finish does help protect the knife from rust a little.

• This Zakuri 210mm Blue #1 Wa-Gyuto is a special order knife with an ebony octagon handle (horn color may vary). The Blue #1 edge takes a very sharp edge and holds it for quite some time. Blue #1 is designed for excellent edge retention, and though it doesn't get as sharp as white #2, take a very nice edge still. This knife is not stainless will patina with use. If not cared for properly, it may rust.
