These Gesshin Ittetsu Powdered Steel knives are a solid powdered steel knife in the 65-66 hrc range. They are mirror finished, have exceptional grind quality and some of the nicest fit and finish we have seen. They are medium thickness knives along the spine, but rather thin behind the edge. They have excellent edge retention and take a really nice edge. In terms of brittleness, they are surprisingly not as brittle as one might expect for a solid powdered steel knife at this hardness. We hope you enjoy these amazing knives.
