This Gesshin Ittetsu 270mm Blue #2 Hon-Kasumi Wa-Sujihiki comes with a ho wood octagonal handle and matching saya. The sides of this knife have a misty white polish and the core steel can be seen in a slightly more polished finish near the edge. When visiting Ittetsu a few years ago, we saw this kind of finish on some knives in their workshop and asked if we could have some made. The profile and grind are very nice and the polish is really fascinating.

These are a stainless steel, but have excellent edge retention and perform at a level I would put on par with all but the most high end single bevel knives. In fact, they are the closest to using carbon steel without being carbon steel of any stainless single bevel knives i have ever tried. These Gesshin Ittetsu Powdered Steel knives are a solid powdered steel knife in the 65-66 hrc range. They are mirror finished, have exceptional grind quality and some of the nicest fit and finish we have seen. They are medium thickness knives along the spine, but rather thin behind the edge. They have excellent edge retention and take a really nice edge. In terms of brittleness, they are surprisingly not as brittle as one might expect for a solid powdered steel knife at this hardness.
