Zakuri 270mm Blue Super Kurouchi Wa-Sujihiki (Ebony Handle)

This Zakuri 270mm Aogami Super Kurouchi Sujihiki is a special order knife with an ebony octagon handle (horn color may vary). As a slicer, this knife is a little more robust than the super thin ones that have become popular recently, however, there is a decent distal taper and a pretty wide bevel. The Aogami Super edge takes a very sharp edge and holds it for quite some time. Aogami Super is, in my opinion, the best balance of sharpness and edge holding in a high carbon steel today. This knife is not stainless will patina with use. If not cared for properly, it may rust. However, the kurouchi finish does partially protect the blade from rust.
