Gonbei 165mm Powdered Steel Santoku

  • In a recent visit to Japan, we came across these HSS (High Speed Steel) santoku, and thought they might be a fun addition to our store.  They are relatively thin, and the steel is hard and has great edge retention.  While not as easy to sharpen as most carbon steels, these are by no means difficult to sharpen, depsite their higher hardness of about 64hrc.  They move through food easily, and have a nice in hand feel.  They come with an oval ho wood handle with a water buffalo horn ferrule.
