Gesshin Heiji 210mm Semi-Stainless Wa-Sujihiki (No Saya)

  • This Gesshin Heiji 210mm Wa-Sujihiki is made from Heiji's special Semi-Stainless steel. It is hardened to about 63hrc. It comes with a burnt chestnut octagonal handle. The 210mm sized sujihiki have always been my personal favorites as line knives for professional chefs and as utility knives for home cooks. I have one of these that I use all of the time.
