Morinoki 240mm Bread Knife

  • The Morinoki series, from Shizu Hamono, is a pragmatic tool with a simple, clean, and straightforward design. The handle is made from Japanese Zelkova and is lightweight and comfortable. The blade is 240mm long, enough for most types and sizes of bread. The edge features 2 types of serrations, helping it function well on both hard and soft breads, and its thin nature helps keep crumbs to a minimum. The more aggressive serrations at the tip function to begin cuts through harder and more crusty breads, while the serrations in the middle and near the heel work best once the cut has begun and for softer or more delicate items. Although we’ve known this maker for years, it was actually my repeated use of this knife at my in-law’s house, where this functions as their main bread knife, that was the convincing factor in wanting to provide it to our customer base.
