Our Gesshin Magomitsu workshop is dedicated to the production of historical styles of knives and the preservation of history and traditions of the people of the Noto Peninsula. Their strong ties to the sea and the cuisine they developed from it prove the need for dependable tools that can withstand the rigors of the ocean.
A departure from the more rustic offerings by these craftsmen, this santoku showcases a refined elegance that sets it apart. The blade is forged with a thinner cross-sectional geometry than their ikasaki, lending it a lighter feel and smoother glide through ingredients. This geometry enhances precision and reduces drag, making it especially well-suited for fine slicing and everyday kitchen tasks.
Adding to its distinction, the blade is clad in a subtle yet striking damascus pattern, giving it a visual depth and sophistication that contrasts beautifully with its workhorse performance. While practical in every sense, it is also among the more aesthetically refined knives produced by these makers.
The handle pairs cherry wood with a walnut ferrule, balancing warm tones and natural textures that complement the blade’s character.
