Gesshin Kagekiyo 270mm Blue #1 Left-Handed Yanagiba

  • The Gesshin Kagekiyo Blue #1 Yanagiba is a knife used for portioning, skinning, and slicing fish for sushi, sashimi, crudos, etc. and in this case, it is for a left-handed user. The high-quality construction includes a blue #1 hagane and a soft iron jigane. The grind of the knife is finished off very well to the exclusion of the many large high-and-low spots common on more affordable single bevel knives. This means that each subsequent sharpening that is done to this knife will be off to a good start. The spine and choil are polished and the choil is chamfered to relieve you of any uncomfortable hotspots. The blade is thin relative to many other yanagiba and as such will be more nimble and lightweight in the hand. Finally, the blade is finished with hand-engraved kanji and comes with an octagonal magnolia and buffalo horn handle.
