The Gen series is a stainless-clad VG10 knife made in Seki, and happens to be a very enjoyable version of VG10 to use and sharpen. The d-shaped handle is right-handed and made of pakkawood with a stainless insert at the top that helps prevent water from getting into the handle without overlapping the ferrule and increase the resistance to bending at the handle. The fit and finish on this series is very nice, and the kurouchi hammered damascus aesthetic is excellent. They are relatively thin, and yet still retain decent toughness and durability. We think they will work well for both home cooks and working professionals alike. The boxes are also very nice and are made in the “shihouchitsu” style, with clasps to hold the box closed.

Based on a recommendation from one of our customers, we have decided to bring you the Tosagata bocho from Zakuri. Zakuri is based in the Tosa region and the Tosagata Bocho is a unique Tosa based knife. It is very much like a thin and nimble santoku. At 180mm this knife is a great size for home cooks or for professional cooks as a utility or line knife. The Blue #1 in the knife will take an amazing edge and has pretty good edge holding capabilities. As with most carbon knives, this one sharpens very easily too. The kurouchi finish on this knife helps prevent rust, but this knife should still be cleaned and dried after use. The D-shaped handle on this knife is made of walnut and it has a plastic ferrule.
