The Matsu Stainless line is a series made in the Seki region. This series features extremely thin geometry in 18-8 stainless steel at 58-59 HRC. These knives have nice convex taper from spine to edge and feature western handles made of pakkawood. Despite how thin they are, they are still on the tough and durable side of things here at the store, and will be great for home cooks and professionals needing workhorse knives alike. Being as thin as they are, they are also great introductions for people looking to experience "laser" grinds as well. The Matsu Damascus line is a series made in the Seki region. This series features relatively thin (but not quite laser-like) geometry in VG10 (a stainless steel at 60-61 HRC. These knives have nice convex grind from spine to edge and feature western handles made of micarta. While not the most tough and durable of the knives we carry, they are still on the tough and durable side of things, and will be great for home cooks and professionals needing workhorse knives alike. They feature better edge retention and food release than their aus-8 brothers, but being not quite as thin, may not move through tall dense foods quite as easily. The fit and finish is quite nice and the handles have some heft to them. We are happy to introduce this to our lineup and we hope you enjoy these as much as we do.
