The Matsu Stainless line is a series made in the Seki region. This series features extremely thin geometry in 18-8 stainless steel at 58-59 HRC. These knives have nice convex taper from spine to edge and feature western handles made of pakkawood. Despite how thin they are, they are still on the tough and durable side of things here at the store, and will be great for home cooks and professionals needing workhorse knives alike. Being as thin as they are, they are also great introductions for people looking to experience "laser" grinds as well.
