The Gesshin Ittetsu 180mm White #2 Single Bevel Wa-Petty is a very cool knife. As a single bevel knife, it is actually a lot like a yanagiba, but slightly thinner than what Ittetsu normally does for yanagiba in this size. This knife works out to be a very nice utility knife and can be used for slicing many things (though it should be kept away from very hard foods and meats with bone). For a long time, I used a yanagiba this size as a utility/multi-purpose knife in professional kitchens. I still use that knife to this day in my home kitchen for meats (both cooked and raw), veggies, and fruits.

The grind of the knife is finished off very well to the exclusion of the many large high-and-low spots common on more affordable single bevel knives. This means that each subsequent sharpening that is done to this knife will be off to a good start. The spine and choil are polished and the choil is rounded off to relieve you of any uncomfortable hotspots. The blade is thin relative to many other deba and as such will be more nimble and lightweight in the hand.
