The Kochi line is an exclusive to Japanese Knife Imports. These knives have a great in-hand feel and are exceptionally well crafted. They feature pronounced distal tapers (getting thinner from heel to tip). Near the heel, they have a nice flat spot, and towards the tip, a gentle curve. The octagon burnt chestnut handles are very comfortable and retain grip very well when wet. These are clad in a carbon damascus cladding and have a carbon steel core. As such, they will require additional care and maintenance to prevent rust and manage oxidization. The wide bevel design helps improve food release and makes thinning much easier over time.
Though we are not sharing the exact steel, it happens to be great for edge retention and is relatively easy to sharpen. If you are curious about it, feel free to reach out and ask. We just try to encourage people to focus on aspects of the knife that are often more important than knowing the steel type- cross-sectional geometry, what kind of performance you can expect from the steel, etc. Things like this can vary, even with the same steel type.
