The Gesshin Ginga line is a custom line we have produced for us exclusively. These knives are very thin and light and have great fit and finish. The spine and choil are rounded and polished. The steel is a very fine grained stainless steel hardened to about 61HRC. These knives take a great edge, sharpen easily, resist chipping well, and have great cutting performance due to their awesome geometry.
Some years ago, our friend, Joe Sasto (@chef.joe.sasto), asked us for help getting a special knife made for him, focused on the kind of pasta cutting he does regularly. He had experience with Ashi-san's knives and was looking to have something made by them. He wanted something flat, like a nakiri, but longer. Together, with his input, we came up with this 270mm Nakiri, and it seems to have worked out well. Ever since he started using it, we've been getting questions about it. So, we decided to add them to our lineup. This might be the first pasta-focused nakiri ever. Who knew it would work out so well. The Gesshin Ginga knives are exceptional stainless knives for both professional and home use. They have a great profile and great geometry. Thanks to their thin grind, you will find that these knives resist wedging in foods and make your cutting tasks a lot easier.
