Suisin Doi 240mm W#2 Kiritsuke with Ichii Handle

  •  Before Kejiro Doi retired, we ordered a number of knives from him, as well as some older stock knives that he forged previously.  This Kiritsuke was an older kiji (rough forged blank) from him, and features a white #2 hagane, as opposed to the blue #2 he used in the Hayate series.  White steel work from him became increasingly rare as he got older, which makes this Kiritsuke a unique one.  It features the Doi family mark on the back.  Unlike Suisin's basic white #2 series, this knife features significantly better fit and finish, coming with a rounded and polished spine and choil.  It also comes with an Ichii octagon handle and a ho wood saya.

    Doi-san's work is known for its toughness, ease of sharpening, resistance to warping, and edge retention. When ordering from craftsmen, it's possible to ask for different levels of work, but this series represents some of his best work
