Ginrei 240mm AEB-L Kurouchi Wa-Gyuto (Thermory Ash)

  • Ginrei knives forged, heat-treated, ground, and sharpened all by hand in a very small workshop.  These are the only knives we carry not made in Japan.  But while they are not made in Japan, they are made by a craftsman who was trained in Japan, and whose work is done in the same manner and using the same methods that many of the craftsmen in Japan that we work with employ.  These knives are made out of AEB-L, a finely grained stainless steel that is very easy to sharpen, great at edge taking, tough & durable, and all-around very enjoyable to use.  They are ground pretty thin behind the edge but are not quite as thin at the spine.  They have good food release.
