  • This is a medium grit aoto.  It is very similar in performance to the monzento that I have come to enjoy over the years.  The stone is a medium-soft stone, which develops mud very quickly and cuts relatively quickly for a natural stone.  The finish is somewhere between 1000-3000 grit, with visible scratch patterns showing on the finished surface.  This stone does an excellent job creating contrast between jigane and hagane, and, due to the mud creation, leaves a very smooth and even finish.  The resultant edge has some serious bite, and can work well for butchery of all kinds, as well as any other tasks that require extra bite/feedback while cutting (i.e. tomatoes).


    Natural stones from this region are rich in silica, which acts as a main abrasive. The potential finish can improve with extended sharpening, with results depending on the stone hardness, the pressure you use during sharpening, water, etc.


    This stone should be used like a splash and go stone... add just enough water to lubricate the surface, but not too much.  The goal is to develop mud, so keeping the surface very wet is prohibitive to mud development.
