This is something we have been working on for a few months now, together with one of our partners in Japan. Sara and I are very excited to finally be able to introduce it. These knives represent some of the highest level of craftsmanship and quality we have seen. The blacksmiths, sharpeners, and even lacquer-ware craftsmen are all amazingly skilled, as can clearly be seen by simply looking at them. In fact, all of the craftsmen are certified craftsmen or dentou-kougeishi (a very prestigious honor). These knives have amazing fit and finish, spectacular grinds, some of the most beautiful handles and sayas we've seen on Japanese knives, and amazing geometry. They are really thin behind the edge, have great distal taper, and wide bevels, making them easier to thin and sharpen. The lacquer craftsmen uses real lacquer on these, not synthetic lacquer as more commonly used. Even the boxes are beautiful lacquer-ware. Since starting to use these a few years ago, they quickly became my favorite. I believe that most professional sharpeners are always on a quest for the best coarse stone they can find, but its always hard to find the perfect coarse stone. This one comes as close as any I have tried. While its not as fast as our Gesshin 220, it is as fast cutting as many 320-400 grit stones. However, being 800 grit, it fits within the medium grit range (naka toishi). The scratches it leaves are not as deep as those from the coarser stones I would normally start with. This allows me to jump directly from this stone to my finishing stones, cutting my sharpening time drastically. For example, a common 2 stone set up in our workshop might include this 800 grit stone and any one of our 3000-8000 grit stones (most often, it ends up being one of our 6000 grit stones). \u003c\/p\u003e\n\u003cp\u003eUnlike other diamond stones found commonly in the market, this stone acts more like the traditional soaking stones many are used to. It is porous and actually soaks in water while providing a more traditional whetstone feel. Because it is extremely thin, it soaks rather quickly (in just a few seconds), so despite not being technically splash-and-go, it is probably the closest one can get.\u003c\/p\u003e\n\u003cp\u003eAs you can see in the picture, the stone is mounted on a glass plate. The stone itself is only about 3mm thick. However, the stone is extremely slow-wearing, and does not need flattening often. As a preventative measure, one should sharpen as evenly as possible on the surface of this stone to prolong flattening intervals as they can be rather tedious, time-consuming, and detrimental to some flattening devices; do \u003cstrong\u003enot\u003c\/strong\u003e use diamond flattening plates. The most effective device for conditioning and flattening is the pink \u003ca href=\"https:\/\/www.japaneseknifeimports.com\/collections\/sharpening-accessories\/products\/gesshin-extra-large-stone-fixer-100-grit\"\u003eGesshin Extra Large Stone Fixer\u003c\/a\u003e. They are really thin behind the edge, have great distal taper, and wide bevels, making them easier to thin and sharpen. These knives are made of ginsanko (silver 3) steel and are stainless, unlike the white #2 version we have. They come with ho wood octagonal handles and matching ho wood saya. They are very well finished and have significantly fewer problems than lower cost knives (all knives have some imperfections…even high-end knives…but these have less high and low spots, less sharp non-cutting edges, less prevalence of wavy backs, less prevalence of torsional twisting, etc.). The handles on these knives come with either black, marble, or blonde buffalo horn. The ATS-314 core is exceptionally well heat treated, as they use molten salt baths in the process, which we agree is an excellent way to go about heat treating this steel. The traditional approach excludes glazing and utilizes a 2-week-long firing process relying solely on red pine as fuel. The clay is dug up from the soil of the rice fields in the nearby area. The Tokeido kiln has been passed down for 18 generations within the Kimura family, one of the original \"Six Families\" who were exclusively permitted to create Bizen style pottery in the Muromachi Era by the master of Tea Ceremony (or local lord). Furthermore, the Kimura family has been a purveyor to the Imperial Household Ministry and the Ceremonial Agency.
