This Gesshin Ittetsu 300mm Fushuko Hon-Kasumi Yanagiba comes with a ebony octagonal handle and ho wood saya. These are a stainless steel, but have excellent edge retention and performs at a level I would put on par with all but the most high end single bevel knives. In fact, they are the closest to using carbon steel without being carbon steel of any stainless single bevel knives I have ever tried. We have been trying to find a higher end stainless single bevel series like this for a long time...here it is. This "honyaki" blade is not made in the traditional sense, but is rather a "zen-ko" knife, forged from a solid piece of stainless steel. It does not feature a hamon, but is made to the highest standards.
