The Gesshin Stainless 220mm Chinese Cleaver is designed for all-purpose use. It is about the size and weight of a #6 cleaver and is pretty much a stainless version of the Suien VC Chinese cleaver we carry. It's relatively tough and durable, has decent edge retention, is easy to sharpen, and has nice fit-and-finish. It's not super thin, but it is by no means thick. This is a great fit for someone looking for a good first Chinese cleaver or a nice workhorse Chinese cleaver for work.
*Chinese cleavers are not designed to be used on bone or for boning tasks... they are much more like chef's knives than meat cleavers.
