Kochi

The Kochi knives are an exclusive line of knives we have developed in conjunction with a younger craftsmen we met in our travels across Japan.  As a general rule, we do our best to support younger craftsmen in Japan, as there aren’t too many of them.  We have two styles in this series thus far- a kurouchi version with takefu v2 steel and a migaki (polished) version with blue #2 steel.  We have both kataba (single bevel) and ryoba (double bevel) knives... up to 270mm long.  All of the kochi knives come with burnt chestnut handles, but sadly no sayas.  The knives are a bit thicker at the spine and have a sturdy feel, but are exceptionally thin behind the edge.  Also, the spines and choils are comfortably rounded.
