The Zakuri 165mm Blue #1 Funayuki is a pretty cool little knife. I ordered them because I thought they would be a good alternative to a 165mm santoku. They have a little more belly and a little more blade height than a santoku would, which makes it more like a large utility knife or a small gyuto. It’s a pretty light and nimble knife with a comfortable handle. Blue #1 is a great steel for knives. It has a very high carbon content, great ability to get sharp, and very good edge retention. Not too many knife makers use Blue #1 because it can be difficult to forge. The 165mm length is a comfortable size for many home cooks and pros looking for a smaller line knife. This knife polished on both sides and is not stainless, so it will patina with use. If not cared for properly, it may rust.
