Suien knives came into my world by way of the Suien VC Chinese Cleaver. When we started this business, we did a little research and found out they make some gyutos and pettys as well. They are all virgin carbon steel hardened to about 63hrc. They are very good workhorse knives. Not too thick, not too thin… very chip resistant. They are easy to sharpen and take a very nice edge. In a lot of ways, they remind me of some of my first western handled carbon steel gyutos. I think these are great knives for people just getting started with Japanese knives, people interested in carbon steel knives, and people looking for workhorse knives.
