The Jin knives are one of the things Sara and I are most proud of in our store. They are unique to say the least. But they also embody some of the aesthetics, history, and values we appreciate most. The knife maker began making knives from before the end of WWII, and has been making them ever since. He does everything himself- from the making of the blade, to the sharpening, to the making of the handles and sayas. The blades are made from a high speed tool steel (not stainless) that has amazing edge retention and takes a very good edge.
