The Gesshin Hokubo line of knives is another exclusive line custom made for Japanese Knife Imports. This line represents some of the best craftsmanship form the Tosa-Yamada region in Kochi prefecture. These knives are forged with blue #2 steel and soft iron cladding. We have both kurouchi and migaki (polished) finishes. Also, there are a variety of handles we put on these knives, from chisel carved lacquerware handles to fukiurushi handles. They all have metal ferrules. One of the more unique knives we have from this series are katsuo bocho… a knife unique to the Tosa region, specifically for breaking down katsuo (skipjack). Custom orders are possible from this line.
