The Gesshin Heiji knives are a line of knives we have made specially for us by Nakaya Heiji. Nakaya Heiji primarily makes saws and wood working tools, but for many years they have been making kitchen knives. We have two types of steel in this line- semi-stainless and Iwasaki special carbon. The semi-stainless steel is one of my favorite steels for kitchen knives… it sharpens easily, takes an edge on par with almost any carbon steel, and has great edge retention. The carbon steel is also a great steel… very similar to white #1 steel. These knives tend to be on the harder side, so they require a bit more skill and finesse to be used and cared for effectively. They are middle of the road when it comes to blade thickness… not super thin, not super thick. We also can do special orders from Gesshin Heiji.
